Coffee Truck Power and Water: Sizing the Systems Everything Else Depends On

An espresso machine is an electrical and plumbing appliance that happens to make coffee. Build a load table, size the generator or battery bank honestly, pair your water tanks to code, and filter the water before it destroys your boiler.

Start With a Load Table, Not a Generator

Almost every underpowered coffee truck started with someone buying a generator based on a forum recommendation. Do the arithmetic instead. List every device, its running watts, and its startup surge, then mark which ones can genuinely run simultaneously during a rush.

Typical figures: a two-group espresso machine at 2,000 watts or more, each grinder at 400 to 900, under-counter refrigeration at 400 to 800 running with a much larger compressor surge, an ice machine at 500 to 1,200, a water heater at 1,200 to 1,500, and lighting plus point-of-sale under 200. Add them honestly and most coffee trucks land at 4,000 to 6,000 watts of real demand.

Size for Surge, Not Just Running Watts

Running watts is the number on the box; surge is the number that trips your breaker. Compressors on refrigeration and ice machines draw several times their running load for a fraction of a second at startup, and espresso boilers reheat in hard cycles rather than a smooth draw.

The practical rule is to size total capacity at roughly 1.5 times your calculated simultaneous running load. That is why operators who calculate 4,500 watts of demand end up specifying a 7,000 watt unit and never think about power again.

Generator vs. Battery Bank

Two viable architectures, with a real tradeoff.

  • Inverter generator. Cheapest capable path, and the only one that runs an espresso machine all day without anxiety. Insist on inverter rather than conventional open-frame: inverter units throttle engine speed to load, which produces clean low-distortion power that will not shorten the life of your electronics, and they are dramatically quieter — which matters when customers stand three feet from it.
  • Lithium battery bank with a pure sine inverter. Silent, no fumes, no fuel runs, and it lets you serve indoor and noise-sensitive events a generator is barred from. It costs several times more up front and imposes a hard runtime ceiling, because a 2,000 watt espresso boiler is a genuinely heavy load to carry on batteries.

Many established trucks run both: batteries for early setup, quiet locations, and indoor bookings, with the generator as the rush-hour and bad-day answer.

Where Solar Actually Helps

A rooftop array will not run your espresso machine. What it does well is carry the standing loads — refrigeration, point-of-sale, lighting, ventilation — and recharge the bank between locations, which extends how long the generator stays off. Treat solar as a fuel-reduction and quiet-hours system, not as your primary supply, and you will be happy with it. Size it as a primary supply and you will be disappointed.

Fresh and Grey Water Are Sized as a Pair

Health codes almost universally require the grey water tank to meet or exceed fresh capacity, so you do not get to fit a big fresh tank and a small waste tank. Most jurisdictions set a fresh minimum of 30 to 50 gallons for a mobile food establishment.

Then weigh it. Water is 8.3 pounds per gallon, so 50 gallons fresh plus 55 grey is roughly 870 pounds when both are full — before the espresso machine, generator, refrigeration, and two staff. Check the truck's GVWR against a fully loaded weight, not an empty one. This is where format decisions get made for you.

The Pump and the Hot Water Heater

A 12V demand pump delivering around 3 to 5 gallons per minute at 40 to 55 psi is the standard for mobile service. Install an accumulator tank if your pump cycles noisily — the short-cycling chatter is audible at the window and it wears the pump.

Hot water is a compliance item, not a comfort one. A small heater, often around two gallons, must serve both the three-compartment warewash sink and the separate handwash sink at code temperature. Size it for both stations; sizing for the handwash sink alone is a common first-inspection failure.

Filtration Is Not Optional

This is the single most consequential system in the truck and the one most often skipped. Untreated municipal water will scale an espresso machine's boiler and heat exchanger badly enough to void the warranty, and hard water regions can do it in a season.

You want an in-line filtration and softening setup sized for your volume, plumbed ahead of the machine, with a service interval you actually keep. Espresso machine manufacturers will ask for water test results when you make a warranty claim. The repair you are preventing costs more than the entire water system.

Ventilation and Heat

A metal box containing a boiler, a compressor, a generator, and two working people gets brutal fast, and heat degrades both drink quality and staff endurance by mid-morning. A powered roof vent moving air continuously is the baseline fix, and a MaxxAir roof vent fan is the format standard for exactly this reason. Install it during the shell stage — cutting the roof after the interior is finished is miserable work.

Wiring, GFCI, and the Inspection

Have a licensed electrician do the panel, the circuits, and the GFCI protection. The fire marshal will look at this work, and unpermitted wiring in a commercial vehicle is one of the few findings that can stop you outright rather than generate a correction notice.

Put the espresso machine on its own dedicated circuit, and keep refrigeration and the ice machine on separate circuits from it so a surge on one does not brown out the other. While the walls are open, run generous lighting circuits — LED shop lights for the work zone and under-cabinet lighting over the bar draw almost nothing and are far easier to install now than later.
